Let’s Make Pineapple Rice!

Pineapple is one of my favorite fruits! Not only is it high in bromelain which is awesome for digestion and inflammation, it goes great in savory and sweet dishes too! I decided to make my version of the popular Thai dish~ Pineapple Rice. Traditionally this dish requires more steps and ingredients and is typically served in a hallowed pineapple but today I’m making my delicious and easy version I know you will love! Ingredients 1 cup diced pineapple 1/4 cup pineapple juice 1 1/4 cup water 2 tsp white or cane sugar 1 1/2 tbsp unsalted butter 1/2 tsp kosher salt 1/4 tsp red pepper flakes 1 cup basmati or jasmine rice (no replacements) Juice of 1/2 lime
Chopped cilantro
Directions

  1. Simmer everything but the rice, lime juice and cilantro on medium heat.
  2. Once it begins to simmer add the rice and cook on medium low heat for 15 minutes covered.
  3. After 15 minutes turn flame off and fluff rice, leave it covered for 5 minute.
  4. Toss in lime juice and cilantro and serve! I know you’ll love it!
