The making of Okra and liver soup: busting with nutrients!

According to the American Heart Association, okra is not only rich in fibre and antioxidants, but is also known to reduce cholesterol levels and control blood sugar level Source and liver has been described by an article on WEB-MD as one of the most nutritionally dense foods on the planet. So this is a recipe for combining this two power foods in a delicious Nigerian delicacy.

Ingredients:

  • okra
  • Beef liver
  • Palm oil
  • seasonings
  • pepper
  • salt
  • onions
  • pumpkin leaf (Ugwu)

Okra soup is one of the easiest to prepare Nigerian cuisines, take just under 30mins to prepare, below are the steps I took to make mine.

I washed the liver and other parts of beef I liked to add with salt and clean water

Then I sliced my onions into the pot, added the seasoning and pepper spice

Water is added to mix it all together, and then brought to parboil for about 5mins.

Next I wash my Okra

and then chop it to little pieces

Next is to add the sliced okra to the parboiled liver and put back on the burner to cook, while cooking I added the palm oil, seasoning cubes, salt to taste, and then cover the pot so everything can mix together properly.

Last piece of the puzzle is my pumpkin leaf (local name: ugwu), which I already had sliced at the market, I washed it properly and added it to the mix, this I allowed to cook for about 3mins

After about 3mins, I stirred the contents properly, and voila! My okra soup is ready😁

This can be eaten with garri, semovita, pounded yam, etc. This post doesn't cover the process of making the above.
