Afternoon everyone….

Well that was a surprise…..

I woke up this morning to roughly five inches of snow on the ground. Per the weather forecast we were only supposed to get a dusting if that.

Wrong again Mr. & Mrs. Weather person….

I was out and about early this morning. I get together with the same group of people every year for the Superbowl.

It’s a tradition that we each make a dish to bring. Then we also order a bunch of different style and toppings pizzas as well. Typically we order the pizza to be delivered around 8:00pm which is roughly halftime.

So my signature Superbowl item is a true Texas chili. Which is made up of tiny cubes of steak. No beans no ground beef. It must be steak.

That’s why I was out and about early. My buddy who owns the butcher/fish market had one of his small cube rib-eye steaks for me.

Texas chili is a long process with many layers of flavor. I dry roast all of my spices first before putting them in a mini coffee grinder to use.

There are three separate dumps of spice blends put in at just the right time, in order to layer the flavors together. I’ve won a few local chili cook offs with my recipe.

If you’ve never had true Texas chili you are missing out. It’s a heavily spiced tomato based sauce with melt in your mouth slow cooked steak cubes.

Here’s a pic:

There is never any chili left by the time the game is over. One of my other friends Bob is a wing master. He makes several different kinds of wings for the game. He makes the traditional hot wings both normal hot and pretty smokin hot. He’s making wings with Old Bay seasoning on them. Yep, you heard me right Old Bay. If you think that sounds strange try it and you won’t ever question it again. They are fantastic. He also does spicy teriyaki wing with a pineapple/sriracha glaze that is outstanding.

It’s his house we will be at so he has the luxury of making it fresh for us. Chili travels well.

There will also be a few different Italian style dishes make by my buddy Joe’s wife. She makes inverted paninis with all different fillings. Inverted is when you turn the crusty side of the Italian bread in and toast the insides of the bread in the panini maker. I don’t know what she’s doing today but in the past she’s done roasted eggplant with fresh mozzarella and arugula. Chicken cutlets with roasted peppers with a fresh pesto sauce. Prosciutto with smoked mozzarella and olives, and sliced hot sausage, roasted potatoes with a roasted onion sauce.

Dam I’m hungry…

As for the game. I really don’t mind either team winning, so I’m just looking for it to be a good game. Lots of Superbowl box pools to win some cash of a little Hive.

So what better way to enjoy a #sublimesunday then watching the Superbowl.

I’ll be leaving shortly.
