Cauliflower Turmeric Rice with Pomegranate

This evening I would like to share recipe for a delicious dish that my wife likes to prepare as a side dish. It comfortably serves our family of five. The photo above was taken by my wife.

This cauliflower turmeric rice dish is very nutritious and full of fibre, but low in calories and carbs. It is a great alternative to rice. There may even be a number of other benefits of this combination, such as fighting inflammation, and promoting weight loss.

The other great thing about this dish is that it is super simple to prepare and very quick to cook. Put it this way, it is a dish that I can prepare without any hassle. ๐Ÿ˜Ž

TIME REQUIRED

Preparation: 15 minutes Cooking Time: 5-7 minutes

INGREDIENTS

  • 1 cauliflower
  • 1 tbsp. coconut oil
  • salt and black pepper
  • ยฝ tbsp. turmeric powder
  • 1 pomegranate

METHOD

  1. Take a whole cauliflower and rinse it with water.
  2. Grate the cauliflower on a large grater or you could use a Thermomix if you prefer.
  3. Add a table spoon of coconut oil to a pre-heated pan, followed by the grated cauliflower.
  4. Add the turmeric and a large pinch of salt and black pepper.
  5. Lightly mix and stir the turmeric into the cauliflower rice, then let it cook for 5-7 minutes.
  6. Taste the cauliflower rice and add seasoning to taste.
  7. Cut the whole pomegranate and remove the seeds.
  8. Add the pomegranate seeds to the cauliflower turmeric rice and serve!
