I highly recommend the Pi 4 2GB, it is only $35 when you can buy it at MSRP and it is 99.9% of the time you don't need more than 2GB.

I don't recommend most "kits" as they typically include inferior components to make the most money on the purchase since the Raspberry Pi has no profit margin.

If you need keyboard/mouse/monitor, I would seriously consider the Pi-400. It is an improved Pi 4 in a keyboard. It is relatively new and a fantastic starting point if you are looking at a desktop solution.

A Pi-400 is a bit more expensive as it includes a sd card, keyboard and mouse and is $100. The Pi 4 2GB will run you around $80-100 or so when you add everything you need. Neither of these include a monitor, I would recommend a TV or a small 21" display if price is an issue. You can get a nice 1080P 21" monitor for less than $100.

For example this Acer 21.5" HD IPS monitor is only $94 shipped.

Amazon will gouge you for Raspberry Pi products as there is no mark up so all distributors will bundle them with inferior products. Canakit is pretty good but the most important thing is to get a Samsung EVO+ SD card, the difference is huge compared to any other SD card on the market for Raspberry Pis.

I'd also check out Adafruit for picking up parts, they are very good for all maker products.
